Denis Fetisson’s signature dishes include creations such as pan-fried foie gras with seasonal fruits and roasted lobster with mild spices. These dishes reflect his expertise and ability to sublimate ingredients.

The truffle is a long-time accomplice to whom he pays tribute. He captures its aroma by putting it in contact with fatty products - cheeses, creams, oils, eggs, white pudding, without altering it by cooking at too high a temperature. Gone are the complicated recipes of yesteryear that cooked them whole under the ashes, prepared them braised in champagne or stewed in cream.

Beginnings and Recognition

Denis Fetisson began his career in prestigious kitchens, working alongside great names in French gastronomy. His career is marked by rigorous training and enriching experiences that have forged his talent and expertise. He runs the Daniel, a Relais & Châteaux in Paris, and won the Jacquart Prize for “Best Hope in French Cuisine”. In Courchevel, he won 2 Michelin stars in 2010 at the Cheval Blanc.

 

In July, he launched “La Place de Mougins” , a family restaurant focused on detail and French heritage . Its innovative concept highlights a seasonal product each month.

Located in Mougins, La Place de Mougins restaurant is Denis Fetisson's jewel. This iconic venue offers a unique gastronomic experience, where every detail is carefully thought out to delight the senses of diners. The elegant décor and warm atmosphere perfectly complement the chef's culinary creations.

In the heart of the gastronomy village, he presents a seasonal product every month, from starter to dessert. Extremely rigorous in the selection of his suppliers and surgically precise in the progression of his recipes, Denis Fetisson lets his creativity explode in their design. In his hands, black truffle, Menton lemon, Mallemort asparagus, farm egg, spiny artichoke, flat peach, fiddlehead zucchini, tomato, porcini mushroom, scallop, eggplant, chocolate reveal unsuspected flavors and juices.
